BBQ Bacon Chicken Salad
Salads are a staple in our house during the summer. They are perfect for warm weather, and they are easy to put together especially if you do some prepping ahead of time. If you put the right right toppings on it and some delicious salad dressing, then I have found many kids will actually try and eat the salad! They are also great because they are so versatile. If one of my kids doesn't like tomatoes then they just won't add them. One kid might like chicken and no bacon. I have a set recipe below, but remember, play around with your own taste buds, and add or leave out whatever ingredients you decide. I usually pick up one or two whole rotisserie chickens once a week from Whole Foods to make life easier. I can then use them for lunches and dinners throughout the week. You can use any chicken for this recipe, but to make life easy I suggest you use some leftover chicken and also use a good quality lower sugar bottled BBQ sauce like this one . Of course you can always make your own as well if you have the time. This recipe makes 6 meal sized portions but you can always modify the recipe to your needs!
Servings: 6 meal sized portions
Ingredients:
- 2 small- medium heads of romaine lettuce
- 2 tomatoes
- 1 1/2 large cucumbers
- 6 slices of good quality pastured bacon
- 1 lb of leftover cooked chicken
- 1/2 bottle of organic BBQ sauce or this one.
- 1 batch of my Dairy Free Creamy Ranch Dressing
Directions: In a large pan cook the bacon until crunchy. Set aside and when cool cut up into small pieces. While bacon is cooking wash and dry lettuce then chop up the lettuce and add the lettuce to a large bowl. Prepare and chop up the cucumbers and tomatoes. Take your leftover chicken and cut or shred into small pieces add your cut chicken to a bowl and add in BBQ sauce. Mix the chicken to make sure all of it is covered in sauce and set aside. Everything for your salad is ready to prepare. Just add you lettuce and add all of your toppings. I suggest you prepare your ranch dressing the day before and also cut /shred your chicken the day before which will make life much easier. Enjoy!!
