Easy Guacamole
I feel like I'm always making guacamole cause ALL my kids enjoy it. It's such a great addition because it's filling and is packed full nutrition. We find ways to put it on everything from taco bowls and salads, to eggs and chicken. It also makes such an easy and healthy snack paired with some carrot sticks or even plantain chips. This recipe is super simple with minimal ingredient, and can be whipped up in less than 10 minutes. It's also free of tomatoes and red pepper making it AIP friendly!
Servings: 4
Ingredients:
- 2 avocados
- Juice 1/2 a lemon or lime
- 1/4 cup fresh cilantro chopped
- 1 garlic clove crushed
- 1/8 tsp onion powder
- 1/4tsp sea salt
Directions: Combine all the ingredients in a bowl and mix. Ready to serve
**If I am short on timeI will prep my cilantro the morning or night before, and store it in a small ziplock bag or container in the refrigerator. This will cut your time drastically!
