Simple Gluten Free Apple Crisp

It's a Sunday afternoon and I feel like this is the first time in weeks that I have had a Sunday that I can just sit, relax and write! With the holidays then gymnastics season starting, life has been non-stop if you can actually believe it could get any busier than my life was before. As moms we think life could not get more busy then more stuff gets piled on. That's mom life reality, especially with  4 kids. However hectic it may get I do love it and embrace it, but I also need a brake at times and today is just amazing.

It's literally the picture perfect day for me to blog about this Apple Crisp recipe that I have been meaning to post for quite a while now. Its cold and snowing outside. It's our first big snow of the season and I'm here  all comfy on the couch in the silence of my house. The toddler is napping and my husband has gone out with the other 3 kids!!!!! So thinking of the oven warming the house and enjoying some warm apple crisp is the perfect picture right now. 

This recipe does cal for gluten free oats so if you have an oat allergy you will want to skip this one. My suggestion for a substitution would be to sub out the  1/2 cup of gluten free oats for 1/2 cup almond flour. I have not tried that substitution but I should work. If you do substitute I would love for you to leave a comment and let me know how it turns out.

Servings; 10-12

Ingredients: 

  • 11  Granny Smith Apples peeled and chopped 
  • 1 Cup Cassava Flour
  • 1/2 Cup Gluten Free Oats ( sub almond flour for oats if grain free or allergy to oats)
  • 1/2 Cup Coconut  Sugar
  • 1/4 Cup + 1 TBSP Ghee ( Use Coconut Oil for dairy free/ Vegan option)
  • The juice of 1 Lemon 
  • 3 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Sea Salt

Directions:

  1. Grease a 9X13 baking dish with ghee or coconut oil and preheat the oven to 350 Degrees F
  2. Peel and cut apples then place in dish. Add lemon juice, 1/4 cup coconut sugar, and  2 tsp cinnamon to the apples and toss. 
  3. In a food processor add  the cassava flour, oats, ghee, remaining 1/4 cup coconut sugar, the remaining 1 tsp cinnamon, sea salt, and nutmeg. Pulse until everything is mixed
  4. Top the flour mixture on top of the apples and add to the oven.
  5. Bake for 45-50 minutes until apples are cooked and beginning to bubble.
