Peach Cobbler Gluten/Grain Free

Labor Day just passed and fall is officially upon us. I know my little ones started school a couple weeks ago, but many of you have children that started yesterday. Although it may officially be fall it still feels like summer with these warmer days, although today was a little cooler here in Colorado. 

Peaches are still in season and at their juiciest. My neighbor recently went to a local orchard and surprised me with a huge box full of peaches as a thank you gift for watching her dogs. Oh my goodness they were SO GOOD. Completely different than any store bought peach. If you have not gotten your hands on a fresh peach from the farmer's market or a local orchard get one cause you are missing out! Originally I was going to freeze some of the peaches, but then I decided I would make a cobbler. Well, I made a cobbler and then 3 days later I made another cobbler cause the kids loved it so much. Needless to say, between 2 cobblers, 4 kids and 2 adults we had no problem finishing off all of the peaches within a week!!

You can modify this recipe to make vegan friendly just sub out the ghee/butter for more coconut oil, however, it won't be as tasty. If you don't have fresh peaches you can also use frozen, but if you can make this with fresh peaches it does make a difference so get those fresh ones if you can!

Servings: 8-10

Ingredients: 

  • 8 Fresh Peaches (You can also use frozen approximately 8 cups)
  • 3/4 Cup Coconut Flour
  • 3/4 Cup Arrowroot Flour
  • 1/4 Cup + 2TBSP Ghee or Grass Fed Butter softned (sub with coconut oil for vegan option)
  • 8 TBSP Coconut Sugar
  • 3 tsp Ground Cinnamon 
  • 1 tsp Vanilla Extract
  • 1/8 tsp Sea Salt

Directions: 

  1. Preheat oven to 350 degrees F and grease a 9x13 glass baking dish with ghee or coconut oil.
  2. Slice peaches (skin can be left on) and add to baking dish
  3. Add vanilla extract and , 1 tsp cinnamon, and 2 TBSP of coconut sugar to the peaches and mix together.
  4. In a separate bowl add ghee or softened butter then add both flours, sea salt, and the remainder of the coconut sugar and cinnamon. Then mix all together until you get a slightly clumpy mixture. 
  5. Add the butter and flour mixture to top the peaches
  6. Bake for 45-50 minutes
