Sweet Potato Fries

A few days ago it snowed here in  Colorado and I totally was not ready for it. Over the weekend it was beautiful and in the 60's then snow and in the 20's and 30's. I'm not ready for this cold weather so I'm really hoping some warmer weather will come again and stay for at least a couple of weeks. Snowy cold days are always the perfect time to  heat the oven up and bale some sweet potato fries!!! 

This  recipe is probably the simplest side dish recipes ever, but also a staple in our household! Sweet potato fries are something that we eat at least weekly if not a couple times a week because every kid likes them and they are super tasty. They also taste ok cold so I will sometimes pack some leftover fries in the kids lunches the next day. sweet potato fries are also a great alternative for those who can't eat nightshades because sadly potatoes are in the nightshade family, however, despite the name, sweet potatoes and yams are not in the potato and nightshade family!!

You can use any sweet potatoes for this recipe, but I have personally grown to love Japanese Sweet Potatoes which are a dark red/purple color on the outside with a light yellow color on the inside. they use to be difficult to find, but now I seem to be able to buy them almost always at natural Grocers and most of the time at whole foods. I also like to use the site skinned sweet potatoes (white skin, white/yellow inside).  If you are completely nightshade free/ on an AIP protocol make sure to omit the paprika.

Ingredients: 

  • 3 Large Sweet Potatoes 
  • 1 1/2-2 TBSP Avocado Oil
  • 2 tsp Sea Salt
  • 1/4 tsp Cinnamon 
  • 1/4 tsp Black Pepper
  • 1/4 tsp Paprika

Directions:

  1. Pre-heat oven to 400 degrees F
  2. Peel and cut sweet potatoes in thick french fries length pieces
  3. In a small bowl combine seasonings 
  4. In a large bowl add potato slices and avocado oil then toss.
  5. Add seasoning to potatoes and toss again to combine. 
  6. Spread potatoes slices on 1-2 baking sheets
  7. Bake  for 30-35 minutes ( flip pieces halfway for more even cooking) 

** If you don't want to flip no worries they will still turn out great!!**
