Teriyaki Salmon Bowl With Zucchini Noodles

Salmon is so good for us! It literally is brain food rich in Omega 3 fatty acids which are also great for fighting off inflammation in our bodies. It is also a smaller fish so contains less heavy metals that larger fish such as swordfish and tuna. If you are going to eat fish always make sure to purchase wild caught. Just like cows that are grain fed begin to have higher amounts of Omega 6 fatty acids present because grain is not what they are supposed treat, farm raised fish who are fed grain ( which also almost always contains GMO's) and other substances that are not part pf their natural diet also contain less Omega 6 fats.  You also have to be on the look out for GMO salmon which has been recently approved by the FDA and is also farm raised. They just don't compare well nutritionally to wild caught fish. I do want to point out quickly that Omega 6 fatty acids are also essential in our diets, however, when out of ration to Omega 3's they cause an inflammatory response in our bodies. And, today, most people get more than enough if not too much omega 6's especially if they are on a regular American diet which consists of grain fed beef, vegetable and seed oils, conventional dairy, and little source of natural Omega 3's. I will go more in depth on that this subject at another time, but I just wanted to give you all a little background about why fish is so important to include in our diet, as well as why wild caught is a superior choice to farm raised. 

So back to about the recipe! I love Asian food, I love anything Teriyaki, and Salmon is by far my favorite fish. And of course I love any meal that is easy and I can fit into one bowl!! I just happened to have a ton of Wild caught Sockeye and Coho salmon in the freezer because both Whole Foods and Sprouts had huge sales this summer so I made sure to stock up. I had some zucchini that we picked up from our Farmers Market over the weekend as well so I made some zucchini noodles with my spiralizer, if you don't have one yet get one!!! And just tossed some ingredients I thought would taste good together. You can always make your zucchini noodles a head of time and store in the fridge to make this dish even easier to prepare!! Another note is that you will see I have this only for 1 serving but you can easily double or triple this recipe!!

Servings: 1 Bowl

Ingredients:

  • 1 6oz piece of Wild Caught Salmon ( I used Sockeye but any type you like will work)
  • 1- 1/2 Large Zucchini made into noodles using a spiralizer
  • 1 Sheet of Toasted Seaweed broken into small pieces
  • 2 Green Onions chopped
  • Sea salt to season Salmon

For Sauce:

  • 2 TBSP Coconut Aminos
  • 1 inch piece Fresh Ginger peeled and grated 
  • 1 tsp Raw Honey
  • 1 tsp Sesame Seed Oil

Directions: 

  1. Line a baking sheet with foil or bleach free parchment paper. If using oven preheat to 400 degrees F. 
  2.  Season salmon with sea salt and place in oven or toaster oven at 40o degrees. bake for 15-20min or until cooked through. 
  3. While Fish is baking take your zucchini cut site off and make noodles with your spiralizer. make sure to periodically pull noodles while spiralizing or else you will have extremely long noodles. 
  4. Fill a pot with filtered water and set on high to boil. When water is boiling, lower heat a little and add your zucchini noodles. Let noodles cook for about 5 min until tender. Not crunchy but not soggy either. 
  5. Now you can prepare your sauce while both fish and noodles are cooking. In a small bowl add all of our sauce ingredients and stir until completely mixed.
  6. drain your zucchini noodles and add then to a large serving bowl. Now top with your cooked salmon, add your chopped green onion, seaweed pieces and drizzle all of your sauce. 
  7. Serve immediately!!
